Authentic Mexican Salsa

Delicious traditional Mexican style salsa is perfect for dipping chips or serving on the side with your favorite entrée. Chopped vine-ripened tomatoes, diced white onion, diced jalapeno chile pepper, red pepper flakes, chopped fresh garlic, sea salt and chile powder combined in saucepan. Salsa is brought to a boil and then simmered for half an hour to meld flavors. Served hot, room temperature or chilled.

Ingredients -

1 pound Vine-Ripened Tomatoes, chopped
1 large White or Yellow Onion, diced
5 Jalapeno Chile Peppers, diced
1/8 teaspoon Red Pepper Flakes
2 Garlic Cloves, chopped
1/8 teaspoon Sea Salt
1/8 teaspoon Chile Powder

 
Preparation:

1. In a large saucepan, add the tomatoes, onion, peppers, red pepper flakes, garlic, salt, soda and chili powder.

2. Bring the mixture to a boil.

3. Cover and simmer for 30 minutes.

4. Serve with chips, over chicken or steak or over eggs.

 



Salsa Making Tips -
Vine-Ripened Tomatoes
Vine-ripened tomatoes are a great choice here as they are very juicy, which is key to this salsa. The ingredients break down when simmered resulting in a very smooth salsa, almost sauce like. Any good quality juicy tomato will work. You could substitute canned diced tomatoes or canned whole tomatoes, if necessary.

Salsa Making Tips -
Jalapeno Chile Peppers
The jalapeno chile peppers will mellow out a bit when cooked. Cut down on the amount of chile pepper added or remove and discard the seeds and inner membrane of the peppers if concerned about the salsa packing too much heat.
