Avocado And Corn Salsa

Avocado, tomatoes, corn flavored with jalapeno, green onions,a and fresh cilantro. Avocado and corn salsa is seasoned with salt and pepper. Perfect salsa served cold with tortilla chips, or warmed and served as a side to seafood.
Ingredients -
 
1 ripe Avocado, cut into 1/2-inch dice
3 tablespoons Fresh Lime Juice
1 ripe Red Tomato, seeded and cut into 1/4-inch dice
1 Ear Sweet Corn, shucked
1 Green Onions, both white and green parts, trimmed and finely chopped
1 Jalapeno Pepper , seeded and minced
1/4 cup chopped Fresh Cilantro
1 tablespoon Olive Oil
Coarse Salt (kosher or sea)
Fresh Ground Black Pepper
 
Preparation:
 

1. Place avocado in glass serving bowl. Mix with 2 tablespoons limejuice.

2. Remove corn kernels from corncob.

3. Add tomatoes and corn to avocados.

4. Just prior to serving add green onions, jalapeno, cilantro, to the serving bowl, and fold in gently.

5. Drizzle olive oil over salsa.

6. Season salsa with salt and pepper.

Cooking Tip

Corn Kernels
Grilling the ear of corn and then removing the roasted kernels is an excellent flavor addition. Whole kernel corn from a can is a suitable substitute for the kernels taken off the ear of corn called for in this recipe.

Jalapeno Chili Peppers
For a hotter salsa add a second jalapeno pepper or add the jalapeno seeds into the salsa. If you really want to add some heat, serrano chilies are much hotter than jalapenos.
