Avocado And Roasted Tomatillo Salsa

Oven roasted tomatillos, white onion, and garlic, mixed with avocado, cilantro, salt, jalapeño chili pepper. Wonderful salsa for dipping your favorite chip or cracker, served on a garlic toast slice, or as a side to your favorite grilled entree.

Ingredients -

1/2 pound Fresh Tomatillos, husks removed and rinsed
1/2 Small White or Yellow Onion, halved
2 Garlic Cloves, unpeeled
2 tablespoons Fresh Cilantro
1 teaspoon Coarse Salt
1 Jalapeño Chili Pepper, seeded and stemmed.
1-1/2 Avocados, halved, pitted and flesh removed, and slightly mashed

 
Preparation:

1. Preheat oven broiler.

2. Arrange tomatillos, garlic and onion on broiler pan.

3. Broil 4-5 inches from broiler, turning once, until tender and slightly browned and charred.

4. Remove from broiler.

5. Peel garlic.

6. Add garlic, tomatillos, onion, cilantro, jalapeno, and salt to food processor. Pulse a few times.

7. Add avocado to tomatillo mixture. Stir to combine.

Tomatillo
Tomatillos can be found in the gourmet produce section of your supermarket and at local farmers markets. They are green in color and the size of tomatoes. The tomatillo flesh is frim, seedy and tastes a bit sour. Remove the paper like husk before using.
