This is a great side dish for broiled or grilled white fish. Canned black beans, whole kernel corn and medium chunky salsa are combined in a serving dish and chilled for an hour to meld flavors before
serving. Salsa can be served chilled, at room temperature or heated in saucepan until hot.
Ingredients -
1/2 cup canned Black Beans, drained
1/2 cup canned Whole Kernel Corn, drained
1 cup Medium Chunky Salsa
Preparation:
1. Combine the beans, corn and salsa in a small bowl.
2. Cover and chill for at least 1 hour before serving.

You could swap out dried black beans that have been rehydrated, Kernels from fresh ears of corn, and homemade chunky tomato salsa for the canned and jarred items in this recipe.

For some color and texture add some finely diced white or yellow pepper, some finely diced green or yellow bell pepper and some minced garlic. This salsa is delicious served
hot especially as a side dish to pork, chicken and fish.
