Black Bean And Papaya Salsa

Great for chips, served over grilled chicken and seafood entrees, or served as a side salad with your favorite Mexican menu. Black bean and papaya salsa combines black beans, papaya, onion, bell pepper, pineapple and lime juices, cumin, cilantro, salt, pepper, and chili pepper.
Ingredients -
 
1 cup canned Black Beans, drained
2 ripe Papayas, peeled, seeded and finely diced
½ Red Bell Pepper, finely diced
½ Rreen Bell Pepper, finely diced
½ Red Onion, finely diced
¾ cup Unsweetened Pineapple Juice
½ cup Fresh Lime Juice
½ cup chopped Fresh Cilantro
2 tablespoon Ground Cumin
1 tablespoon minced Serrano or Jalapeno Chili Pepper
Coarse Salt
Fresh Ground Black Pepper
 
Preparation:
 

1. Combine black beans, papaya, red bell pepper, green bell pepper, red onion, unsweetened pineapple juice, fresh limejuice, fresh cilantro, ground cumin, chili pepper, coarse salt, and fresh ground black pepper in a large serving bowl.

2. Chill until ready to use.

Black Beans
Dried black beans are readily available at your supermarket and can be substituted for the canned black beans. The beans will need to be soaked in water for a period of time, just follow the package directions.

If you wish you can substitute fresh parsley for the fresh cilantro.
