Fresh cherries combined with sugar, red onion, jalapeno, and fresh lime juice, seasoned with fresh cilantro and coarse salt. Cherry salsa makes a delicious sauce for grilled chicken, or grilled pork.
Ingredients -
2-1/4 cups Fresh Pitted Sour Cherries
1 tablespoon Sugar
3 tablespoons Finely Chopped Red Onion
1 Large Fresh Jalapeño Chili Pepper, finely chopped
2 tablespoons Fresh Lime Juice
1/4 cup Chopped Fresh Cilantro
1/2 teaspoon Coarse Salt
Preparation:
1. Chop fresh cherries.
2. In a small bowl, combine cherries with sugar. Stir and set aside for 5 minutes.
3. Add red onion, jalapeño chili peppers, fresh lime juice, fresh cilantro, and salt.
4. Let stand at room temperature 30 minutes.

Frozen cherries can be substituted for the fresh cherries. Chop the cherries while frozen and thaw completely.
