Cranberry Salsa

Nice salsa for accompanying poultry or seafood, Cranberries mixed with onion, parsley, green and jalapeno chilies, orange zest, lemon juice, orange juice, honey and coarse salt.
Ingredients -
 
12 ounces Fresh Cranberries, washed
1 small White Onion, chunked
1/2 cup Fresh Parsley Leaves
4 ounces Green Chiles, diced
2 Jalapeno Chili Peppers, diced
2 teaspoons grated Orange Zest
2 teaspoons Fresh Lemon Juice
1/4 cup Fresh Orange Juice
3 tablespoons Fresh Honey
Coarse Salt, to taste
 
Preparation:
 
1. Add fresh cranberries, white onion and parsley leaves to food processor. Pulse until finely chopped.

2. Fold in diced green chilies, diced jalapeno peppers, grated orange zest, lemon juice, orange juice, honey and salt.

3. Refrigerate 4 hours.

Cooking Tip

Fresh Cranberries
Cranberries can be found year round in most supermarkets and seasonally in most local produce markets. You could substitute frozen or canned cranberries, but the results would not be desirable.
