Mango and peach combined with tomatoes, red onion, yellow bell pepper, Garlic and jalapeno add some kick. Great salsa with tortilla chips or accompaniment to seafood and poultry.
Ingredients -
1 1/2 cups Fresh Tomatoes, chopped
3/4 cup Fresh Peaches, pitted and chopped
1/2 cup Red Onion, chopped
1/2 cup Yellow Bell Pepper, chopped
1/2 cup Mango peeled and chopped
2 tablespoons Jalapeno Pepper, seeded and chopped
3 cloves minced Garlic
1 1/2 teaspoons Fresh Lime Juice
1/2 teaspoon minced Fresh Cilantro
Preparation:
1. In a large bowl, combine fresh tomatoes, peaches, red onion, sweet yellow pepper, mango, jalapeno pepper, garlic, lime juice, and cilantro.
2. Cover and refrigerate until serving.

Fresh Tomatoes
The salsa gets its flavor from the mango and is a very visual salsa, the tomato flesh needs to be firm and free of liquid. Chop tomatoes and drain off liquid. Clean out core of the tomato and chop up the remaining liquid and seed free tomato.
