Fresh Strawberry And Balsamic Salsa

Roasted shallots and fresh strawberries, seasoned with fresh rosemary, mint leaves, aged balsamic vinegar, salt and pepper. Fresh strawberry salsa is nice with grilled fish like salmon, halibut, swordfish and tuna.
Ingredients -
 
1 Large Shallot, peeled, quartered
1 cup Fresh Strawberries (whole or halved small)
1 teaspoon finely minced Mint Leaves
1 tablespoon lightly chopped Fresh Rosemary
1 1/2 tablespoons Aged Balsamic Vinegar
Salt, to taste
Fresh Ground Black Pepper, to taste
 
Preparation:
 

1. Roast the shallots in a 350 F. until tender and caramelized.

2. Remove from the oven and chop finely.

3. In a medium-serving bowl, toss shallots, fresh strawberries, mint leaves, fresh rosemary, balsamic vinegar, salt and pepper.

4. Set aside 10-15 minutes for flavors to blend.
