1. Slice medium white onion into ¼” rings. Drizzle onion with olive oil.
2. Place on hot grill and cook until onion softens and browns.
3. Finely chop ¼ cup onion.
4. Combine onion, fresh strawberries, coriander, cumin, oregano, and sherry vinegar in a small serving bowl.
5. Season with salt and pepper.
