Spicy and hot salsa combines pineapple, papaya, mango, and kiwi with black beans and poblano chile. White vinegar, brown sugar, fresh lime juice and chopped fresh cilantro add additional flavors.
Ingredients -
2 small Pineapples, peeled, cored and diced
2 Papayas, peeled and diced
2 Mangoes, peeled and diced
4 Kiwi Fruit, peeled and diced
2 cans Black Beans, rinsed
1/2 Poblano Chile, seeded and diced
1 cup White Vinegar
1/4 cup Brown Sugar, packed
3 Fresh Limes, juiced
1 cup Fresh Cilantro, chopped
Preparation:
1. Combine pineapple, papaya, mango, kiwi fruit, black beans, poblano chile, vinegar, brown sugar, limes, and cilantro in medium serving bowl.
2. Refrigerate at least 12 hours.

You can buy dry black beans and follow the packaged instructions to hydrate them to the point of being ready for inclusion in your salsa.

Kiwi Fruit
Kiwi fruit, like banana, breaks down very quickly in this salsa. You may want to hold out on adding the kiwi fruit until just prior to serving.
