Mango, green onion, red bell pepper, and jalapeno flavored with garlic and cilantro, seasoned with cilantro. Makes and excellent dip and a great side dish.
Ingredients -
1 ripe Mango, peeled and ½-inch diced
1/4 cup Chopped Green Onions, green part only
1/4 cup Diced Red Bell Pepper
1 tablespoon Finely Diced Fresh Jalapeno
1 tablespoon Chopped Fresh Cilantro
1 Small Garlic Clove, minced
1 tablespoon Fresh Lime Juice
1/4 teaspoon Salt
1/4 teaspoon Extra-Virgin Olive Oil
Preparation:
1. Mix together mango, green onions, red bell pepper, jalapeno, cilantro, garlic, lime juice, salt, and olive oil in a small serving bowl.
2. Chill 1 hour for flavors to blend.

Mango
A large ripe mango weighs between around a pound and chopped up, produces about 2 cups of fruit. You can substitute peaches and nectarines for the mangoes.

Mango salsa goes great with homemade tortilla chips, and served on warm garlic toast. Serve mango cilantro salsa as an accompaniment to grilled poultry and salmon.
