Mango Salsa

Mango, red onion, jalapeno chili pepper and cucumber. Seasoned with fresh cilantro, lime juice, salt and pepper. Crunchy cucumber adds a unique flavor and texture to this salsa, which is best when served with grilled white fish.

Ingredients -

1 Ripe Mango, peeled, pitted, and diced
1/2 Medium Red Onion, finely chopped
1 Jalapeño Chili Pepper, minced
1 Small Cucumber, peeled and diced
3 tablespoons Fresh Cilantro Leaves, chopped
3 tablespoons Fresh Lime Juice
Salt and Pepper, to taste

 
Preparation:

1. Mix together mango, red onion, jalapeno, cucumber, cilantro, and lime juice, in a small serving bowl.

2. Season to taste with salt and pepper.

Selecting a Mango
Ripe mangoes will give a little when touched but go back to their original shape. A ripe mango will also smell very fragrant and fresh.

Jalapeño Chili Pepper
Poblano peppers are a very mild pepper that can be substituted for the jalapeno. For a hotter salsa, choose a serrano, or cayenne pepper.
