Ingredients -
1 ripe Mango, peeled, pitted, and diced
1/2 medium Red Onion, finely chopped
1 Jalapeño Chili Pepper, minced
1 small Cucumber, peeled and diced
3 tablespoons Fresh Cilantro Leaves, chopped
3 tablespoons Fresh Lime Juice
Salt and Pepper, to taste
Preparation:
1. Mix together mango, red onion, jalapeno, cucumber, cilantro, and lime juice, in a small serving bowl.
2. Season to taste with salt and pepper.

Poblano peppers are a very mild pepper that can be substituted for the jalapeno. For a hotter salsa, choose a serrano, or cayenne pepper.
