Peach Salsa

Fresh peaches flavored with green onions, cilantro, bell pepper, lime juice and red pepper flakes. Serve with torillas for a delightful change of pace, blend with softened cream cheese and spread on crackers, present as a topping for with grilled chicken or pork, or spoon over quesadillas and fajitas.
Ingredients -
 
1/2 cup chopped Green Onions
2 large Fresh Peaches, peeled, pitted, coarsely chopped
1 tablespoon chopped Fresh Cilantro
1 tablespoon chopped Red Bell Pepper
1 tablespoon Lime Juice
1/4 to 1/2 teaspoon Red Pepper Flakes
 
Preparation:
 
1. Stir green onions, fresh peaches, fresh cilantro, red bell pepper, fresh lime juice, and red pepper flakes in medium bowl. Cover with plastic wrap and refrigerate at least 1 hour.

Don't substitute frozen or canned peaches for the fresh as the flavors and textures are simply inadequate.
