Pineapple Cilantro Salsa

Vidalia onion, serrano chili, garlic and cilantro, combined with pineapple pineapple juice.
Ingredients -
 
1 cup Vidalia Onion, roughly chopped
4 Serrano Chili Peppers, stemmed and seeded
3 cloves crushed Garlic
1/4 cup Fresh Cilantro Leaves, finely chopped
1/4 cup Pineapple Juice
1/4 cup Crushed Pineapple, drained
1/4 teaspoon Coarse Salt
1 tablespoon Rice Vinegar
 
Preparation:
 

1. Add vidalia onion, serrano chili peppers, fresh cilantro, crushed garlic, and pineapple juice in food processor. Process until well blended.

2. Add crushed pineapple, salt and rice vinegar to food processor. Pulse to mix.

3. Refrigerate 1 hour for flavors to meld.
