Colorful sweet and hot fruity salsa, perfect as a side dish to poultry and fish entrees. Make a few hours ahead of time so flavors have a chance to mingle.
Ingredients -
1 cup Diced Fresh Pineapple
1/2 cup Diced Red Bell Pepper
1/4 cup Diced Red Onion
2 tablespoons Chopped Fresh Cilantro Leaves
2 teaspoons Minced Fresh Jalapeño Chili Pepper
2 tablespoons Fresh Lime Juice
1/2 teaspoon Kosher Salt
Freshly Ground Black Pepper
Preparation:
1. Combine fresh pineapple, red bell pepper, red onion, fresh cilantro, jalapeño, fresh lime juice, salt and pepper.
2. Cover or chill until ready to serve.

Substitute canned pineapple chunks for the fresh, when fresh is not readily available. Drain off the sweet packing syrup.

Taste the lime juice before adding. Too much lime juice can overwhelm the other ingredients and make the salsa bitter.

Subtract minced jalapeno for milder salsa. Substitute serrano chilies for jalapeño chilies for hotter salsa.
