Roasted Pepper Salsa

Roasted red, yellow and green bell peppers, tomato, green onions, serrano chilies, seasoned with fresh cilantro. A great salsa for dipping or for use as a side to your favorite meat dish.

Ingredients -

1 Medium Red Bell Pepper
1 Medium Yellow Bell Pepper
1 Medium Green Bell Pepper
1/3 cup Chopped Green Onions
1 tablespoons Fresh Cilantro, or 1/2 tablespoon dried
2 teaspoons Fresh Lime Juice
1/2 teaspoon Sea Salt
1 Large Tomato, seeded, chopped
2 Serrano Chili Peppers, seeded and chopped

 
Preparation:

1. Grill or broil halved peppers until charred. Place peppers in paper bag and roll the bag tight to the peppers, so they continue to steam.

2. Rinse and dry peppers. Peel and chop.

3. Combine peppers, green onion, fresh cilantro, lime juice, salt, tomato, and serrano chilies.

4. Cover and refrigerate until ready to serve.

 



Salsa Making Tips -
Grilling Peppers
When grilling the bell peppers or the serrano peppers, brush the surfaces lightly with oil before placing on the grill. Its easier to cut around the stem, remove it, pull out the core, and seeds prior to grilling then doing so after grilling.

Roasted Pepper Sauce
This is a great salsa to turn into sauce. Combine all ingredients in the blender and puree. Serve with your favorite seafood.
