Salsa Fresca

Salsa fresca is the perfect salsa for dipping chips, and as a side relish for mexican entrees, grilled fish, meat or poultry.
Ingredients -
 
3 medium Tomatoes, finely chopped
3 Green Onions, finely chopped
1/4 cup coarsely chopped Fresh Cilantro
2 tbs chopped Fresh Parsley
1 Jalapeno Pepper, stemmed, seeded, and finely chopped
1/4 teaspoon Coarse Salt
 
Preparation:
 

1. Combine tomatoes, green onions, fresh cilantro, fresh parsley, and jalapeno chili pepper in a small bowl.

2. Refrigerate several hours for flavors to blend.

Cooking Tip

Jalapeno Chili Pepper
Add the seeds to the salsa, if the salsa fresca is not hot enough. For even hotter salsa substitute serrano chili peppers for the jalapenos.
