Salsa Verde

Salsa verde, or tomatillo salsa in mexican cuisine starts with fresh tomatillos, white onion, seasoned with cilantro, sugar, and salt. A little heat is added to this salsa/sauce with the addition of 2 chopped jalapeno peppers.
Ingredients -
 
1 pound Tomatillos
1/3 cup chopped White Onion
1/3 cup Cilantro Leaves
1 tablespoon Fresh Lime Juice
1/4 teaspoon Sugar
2 Jalapeño Peppers, stemmed, seeded and chopped
Coarse Salt, to taste
 
Preparation:
 

1. Preheat broiler.

2. Remove husks and rinse tomatillos.

3. Cut tomatillos in half. Place cut side down on non-stick cookie sheet.

4. Broil 5 minutes, or until skin begins to blacken.

5. Add tomatillos, chopped white onion, cilantro, fresh lime juice, sugar, jalapeño peppers in food processor and pulse until smooth.

6. Season with coarse salt.

7. Chill in refrigerator, if not using immediately.

Cooking Tip

Tomatillos
Tomatillos should be firm to the touch,a nd the skin should be smooth. Store tomatillos in the refrigerator up to 2 weeks. Always remove the husk before using and wash the tomatillos well to remove the husk residue.

Roasted Onion
Roast the onion on the same cookie sheet as the tomatillos for 5 minutes to break down the onion, some sugar to come to the surface and be caramelized.
