Spicy Grape Tomato and Red Onion Salsa with Fresh Cilantro

Authentic style tomato salsa is ideal for serving as a dip or accompaniment to your favorite Mexican entrée, grilled fish or seafood, or as a breakfast side dish. Grape tomatoes are pureed and combined with chopped red onion, minced garlic, fresh lime juice, chopped fresh cilantro, sea salt, and hot pepper sauce.

Ingredients -

1 pint Grape or Cherry Tomatoes, cut in half
1/2 Medium Red Onion, chopped
1 Garlic Clove, minced
2 tablespoons Fresh Lime Juice
2 tablespoons Chopped Fresh Cilantro
1/4 teaspoon Sea Salt
2 dashes Hot Pepper Sauce or to taste

 
Preparation:

1. In a food processor, add the tomatoes and pulse until it reaches the desired texture.

2. Pour the mixture into a bowl with the garlic, onion, cilantro, lime juice, salt and hot pepper sauce.

3. Cover with plastic wrap and chill until ready to serve.

Grape tomatoes can be found in most supermarkets, farmers markets, and specialty produce stores. They are the size of green or red grapes, and are juicy and delicious like their fruit counterparts. Grape tomatoes are packaged in small plastic pint containers containing several dozen tomatoes. The tomatoes are generally red in color, but they can be yellow or orange in coloring or multi-colored. This is a great tomato to quarter and use for making chunky style salsas.
