1. Preheat a BBQ grill.
2. Spray the corn and red peppers with olive oil cooking spray.
3. Grill the vegetables until lightly charred, turning often.
4. Remove them from the grill and place the pepper in a brown paper bag.
5. Allow to cool completely.
6. Remove the skins and cores from the red peppers.
7. Coarsely chop the peppers and remove the corn from the cob into a mixing bowl.
8. Add the pepper, oil, juice, cilantro and salt and pepper to taste.
9. Stir well to combine.
10. Serve.
