Chip dipping heaven. Tomato, avocado, red onion, cilantro, and jalapeno pepper salsa, seasoned with cilantro and coarse salt, and flavored with lemonjuice, fresh lemon zest, and olive oil.
Ingredients -
2 Tomatoes, finely chopped
1/4 cup finely chopped Red Onion
2 tablespoons minced Jalapeno Chili Pepper
1/4 cup finely chopped Fresh Cilantro
2 tablespoons Fresh Lime Juice
1 tablespoon Fresh Lime Zest
1 tablespoon Olive Oil
1 teaspoon Coarse Salt
1 Avocado, halved lengthwise, pitted and flesh diced
Preparation:
1. Mix together tomatoes, red onion, jalapeno pepper, and fresh cilantro in a serving bowl.
2. Set aside.
3. Add limejuice and lime zest, olive oil and salt to tomato mixture.
4. Stir to combine.
5. Fold avocado into tomato mixture.

The lime juice will help the avocado from turning brown instead of staying green. If not using immediately, press plastic wrap directly against the surface, so the air cannot come in contact with the avocado. Give a quick stir when ready to use.
